How ASCII to text conversion works
Each number is a character code: 65 is A, 97 is a, 32 is a space. The converter splits the input on spaces or commas, checks that every value is a whole number from 0 to 255 (a byte), and joins the matching characters. 72 101 108 108 111 becomes Hello. Codes 128–255 are read as Latin-1 characters.

What is the difference between ASCII to text and byte to ASCII?
Nothing here: both read a list of byte values (0 to 255) and turn each into its character. ASCII itself only defines 0 to 127; 128 to 255 are shown as Latin-1.
